Can infrared goggles really detect heat signatures beyond a wall or are all the movies just making stuff up?

Only certain kinds can. I don't think an IR can but I think they have radars that can.

Infrared is a very large region within the spectrum, and is divided into various sub regions. For most common materials used in buildings you cannot see through the walls. You will only see emitted infrared radiation from the surface of the wall (LWIR, & SWIR Regions) or reflected Infrared (SWIR & NIR regions).
This is a common misconception with infrared.
Infrared that is used for night vision goggles only intensifies reflections in the NIR region and will not allow you to see through walls. Infrared used for thermal imaging (LWIR & MWIR) only sees the heat radiated from the surface of the wall (not through the wall).

No, they definitely can detect heat through walls if they are sensitive enough. However, in the movies the amount of definition obtained is exaggerated. In reality, the picture is kind of blurry.

It would be very blurry because the wall blocks most of the heat.
